- 1½ cups cherries fresh or frozen
- ¼ cup granulated sugar
- 2 teaspoons cornstarch or plain flour
- 3 tablespoons water
- 4 tablespoons sugar
- 500 ml cherry juice
- 1 sachet 41g strawberry pudding mix
- Whipped cream for topping
Make the Cherry Sauce:
Heat 1½ cups cherries with ¼ cup sugar until the sugar dissolves.
In a separate bowl, mix 2 teaspoons cornstarch (or plain flour) with 3 tablespoons water until smooth.
Add this mixture to the cherries and stir over low heat until the sauce thickens.
Remove from heat and let it cool.
Prepare the Pudding:
In a saucepan, combine 500 ml cherry juice, 4 tablespoons sugar, and the strawberry pudding mix.
Pour the mixture into glasses or dessert cups.
Let it cool at room temperature, then chill in the fridge until set and firm.
-
Strain the Cherry Juice: If your cherry juice has pulp or bits, strain it before using to get a smoother pudding texture.
-
Cornstarch vs. Flour: Cornstarch gives a silkier finish, while flour may result in a slightly thicker and grainier texture. Both work—choose based on what you have.
-
Pudding Mix Options:Strawberry pudding mix adds extra flavor, but vanilla or plain pudding mix can be used if you want a milder taste.
-
Storage Tips: Refrigerate any leftovers in an airtight container. Use within 3 to 4 days for best taste and texture.
-
Serving Suggestion: Serve cold for a firmer set. Add the cherry sauce and whipped cream just before serving to keep it fresh
